WHere is an easy version of a drink featured on a new cocktail list. It's a large-volume prepared mix which is loaded full of tastes of the holiday season, rendering it excellent for hosting a holiday party. Save the extra syrup you can use for breakfast cocktails, puddings, or for additional servings of the drink.

Makes enough for 10 guests
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Drink (yields 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
To prepare the Cordial: Put the listed components inside a pot, heat until it reaches a simmer, stirring so the sugar melts. After that, remove from the burner allowing it to reach room temperature fully. Pour into an sterilised bottle, cap it and store chilled, it can be stored for around four weeks.
Preparing the Cocktail Base: Pour every liquid ingredients into a large bottle, let it rest for 60 minutes, then pass it through best through muslin, making it fully clarified.
To serve: Measure 85ml of the cocktail base into a stirring glass filled with ice, and stir gently for about 60 seconds to cool it down. Pour into a frosted cocktail glass or a similar vessel, top with some cranberries and finish using a brief mist of mandarin oil over the drink.
